Hello, I have made the chocolate cake with sweet stout, my problem was with the filling, I tried it twice and both times it curdled, do you have any suggestions as to why this happens?

Hello David,
It may be that you are overheating the chocolate when you make the icing for the Chocolate Beer Cake. Try putting the bowl of broken chocolate over the pan of simmering water and then turn off the heat and just leave the chocolate to melt. When it has melted, remove the bowl from the pan and stir in the cold butter, then use an electric hand whisk to add the icing sugar.
