Apricot Oat Slices
Hi Lindsey
I made the apricot oat slices this weekend as per the recipe but found that the finished bake was very loose and when lifting out just crumbled. Any ideas?

Hello Tim,
I have had a few similar posts regarding this recipe. I’m away for a few weeks but I will make it again when I get back.
I’m the meantime this is the advice that I have given….
To make sure it holds together you need to be press the uncooked mixture down very firmly. Also it helps if the chopped apricots are the soft eating variety so that they feel a bit squidgy when they are chopped. Lastly, when the weather is warm it can help to leave them longer before you cut them so the butter has time to set and helps hold them together.
