hi i want to make a black forest gateu and evey time i make it it cracks would it be better to make the sponges in advance and leave in the fridge or boxed up till later thanks

Hello,
Sponges will soften kept in an airtight tin overnight. Could be that you are overbaking them or your oven is running too high.
