I have a glut of blackcurrants and trying to find ways of using them. I like Delia's Vanilla Cream with blackcurrant coulis but don't have an inch of space in my small freezer for the vanilla cream. Would this work just chilled in the fridge with the coulis rippled through or have you an alternative suggestion that would take blackcurrant coulis (not freezer). Many thanks. Eileen
Hi Lindsey, sometime ago I wrote asking whether you have a very old Delia recipe for Courgette and tomato soup. Have you had any luck in tracing it? I believe it was published in the Evening Standard many years ago.
