

Hi Lindsay, I made Delia's classic Christmas PUD on Saturday. It seemed to 'rise up' quite a bit in the pan, and, whenever I topped up the water, the water still left in the pan was very murky and I think the Christmas pudding 'leeched out' somewhat - is this normal? Once it was cold, I removed the greaseproof paper and foil, and it seemed a bit 'wet/sticky'. Is this correct or have I gone wrong somewhere (esp with the 'leeching out' bit... Thanks, Lindsay.

The pudding does expand during steaming and the melted suet does seep out into the simmering water.
The water is always murky at the end of the cooking time. We always let it go cold and discard the solidified suet in the surface of the water in the bin (or put it out for the winter birds).
The pudding shouldn’t be wet. Is it still wet given more time?
