

Dear Lindsey,
I have been cooking Delia's Christmas Cakes for years, this year I thought I would repeat the Creole cake.
But foolishly I let my partner talk me into putting my cake mix input a slightly larger tin which was square rather than just putting into my usual round tin.
The cake itself looks okay but the size is larger and the rise is not as it would have ben if I had put it in the correct tin
I am reluctant to throw it away but do think I should?
I think serving it will be like having those small piece of stollen.

Hello Paul,
I wouldn’t throw it away.
If will still taste lovely but if it really isn’t the way you want it to look for Christmas you could make another one and use the one you have for other days.
Or if you are serving it to guests you could change the way you decorate it! Perhaps cut it into individual portions and decorate them individually and serve them that way.
