

My son's best friend cannot eat egg, dairy, nut and gluten. As a result, he has never had any cake for his birthday. My son and I would love to bake him a cake for his birthday. The cake that comes to mind that could be adjusted is sticky prune and date cake.
You could substitute the butter for vegetable oil, the two flours for plain gluten-free flour and the condensed milk for condensed soya milk. Then you could decorate the cake with ready roll icing and candles instead of the glaze.

Or we have Marmalade Cake, which could be adjusted. You could substitute the flour for gluten-free plain flour, the butter for lard and the milk for soya milk. I haven’t tested making a larger version but I think that if you doubled the ingredients you could make it in a 7 inch round cake tin. I wouldn’t sprinkle it with the sugar if you were going to decorate it. It will need longer baking but I would still cover it after 50 minutes. This might be nice decorated with orange glace icing, and candles of course.
