

I have made my mincemeat as the recipe in Delias xmas book and for the 1st time it has a slightly bitter taste, how can I rectify this? What have I done wrong? I have used all the recipes in this book for years tried and tested, I don't want to throw it away. Please help. Many thanks. Jeannette

Perhaps you pressed too hard when you grated the zest?
Sugar will counteract bitterness but as mincemeat contains a lot of sugar perhaps a few drops of vanilla extract would help.
