

Good morning
I would like to bake around 12 round fruit cakes( around 7inch) and would like a recipe to make it all in one go. I have a Hobart mixer and semi commercial Rofco oven
I don’t know how to scale up Delias normal Christmas cake recipe
Any help would be appreciated
Also the same for 900g loaves of bread, what would a white loaf recipe be for making 12 loaves

I think (but haven’t tested!) you’ll need a 36 egg batch to make twelve 7 inch round cakes. So that’s 9 x the basic 4 egg (8 inch cake) recipe.
For the bread dough its simply 12 x the basic recipe.

Hello,
For ten 5-inch rounds I think you will probably need a 14-egg batch.
However! These cakes will bake more evenly of you do not overload the oven, or the shelf(s).
If your using conventional heat they should all be baked on the lower shelf.
If your using fan assisted you can distribute the tins on several shelves. (Also, if you are using fan assisted heat you should lower the oven temperature to 115C)
Either way I would leave space between the tins on the/each shelf.
So, depending on your particular oven situation you may be better off baking the cakes in two or more batches.
