

I am making Delia’s Classic Christmas cake but want to cook it in 2 - 2lb. Loaf tins. Can you advise me as to how long they should cook and at what temperature. I do have Silverwood loaf tins also if you think they would be better.

Assuming they all have a capacity of about 1.25L you can use either set of tins.
As always, protect the outside of the tins and cover the tops with parchment (so that it doesn’t touch the surface of the cake mixture).
Same temperature (140 on the lowest shelf in a conventional oven or 115 on any shelf in a fan oven).
I would have a peek at 1 hour to see how they’re looking and then check every 15 to 20 minutes, but I think they will take 2 hours to bake.
