

I tried the recipe for pork chops baked with wild mushrooms and crème fraîche. Unfortunately, it came out very dry and a little overcooked. I cooked them in an electric Aga which does sometimes seem to cook hotter than the temperature. Also, I cooked only two chops (with the other ingredients reduced proportionately). If it were in a microwave, of course, I'd expect to reduce the cooking time but I didn't think that would be necessary in an oven. Can you give any advice because it was a simple dish to prepare (always my favourite sort) and I'd like to do it again? (One other thing: I may not have cooked the mushrooms enough so I may have started with less liquid from them.) Thank you.

As your Aga cooks faster, I would bake them for 50 minutes.
The mushrooms probably would have released even more moisture if you have cooked them less but it could be the amount of fat on the pork chop and / or it could be that your foil parcel needed a tighter seal.
