

My go to recipe for cooking chicken is Delia’s fast roast chicken with lemon and tarragon from her How to cook book.
I have a small turkey for Christmas Day and would like to use this cooking technique...how do I calculate the timings. The recipe is for 1.35 kg chicken and my turkey is 3.6 kg. My guests and family will be grateful for your assistance. Thanks in advance. Helen

If I was asked to test this / develop this recipe, I would roast it for 2 hours and rest for 50 minutes BUT I haven’t tested it so this is only my best guess.

Thank you Lindsey. The turkey was the most deliciously moist turkey we have ever eaten. All my guest agreed. In the end it was rested for 1 hr 15 as the timings for the roast veg was behind. But it was still hot and tasty.
I will now use this technique for all turkey chicken and goose cooking.
Can I ask how you ‘guesstimated’ the timings per kg so I can adjust it for different size birds.
