Adjusting Delia's carrot cake recipe

Delia s carrot cake recipe with the syrup glaze. Can I leave out the sultanas, coconut & pecan nuts without replacing the quantity? My niece has asked for a carrot wedding cake but preferably without those three ingredients. Will it freeze OK? As I'm making three layers. With thanks.

Because wedding days are so important, and we haven’t tried the recipe without all of those ingredients, I would suggest that you could try the cake taking in all of your nieces’ specifications and see if you all like it. Or have a look for another carrot cake recipe that your niece does like all of the ingredients.

We’ve always found that Delia’s carrot cake freezes very well.
