I am looking at your recipe Tunisian aubergine salad with coriander and yoghurt .
How to cook book two page 136 .
As this book is 20 years old, do you think it is still necessary to salt drain aubergine ?

We still salt the aubergine for this recipe. If you have a very firm aubergine and not enough time, I’m sure it will be ok not to.
