Sometimes metal sieves react with acidic fruit but providing your sieve is in very good condition I’m sure it will be fine.
We don’t have this recipe online at the moment because we’ve been retesting it. Some readers have found that the mixture has set in the sieve. In our most recent test, we stripped the currants form the stalks and used a jelly bag and we found it did pass through very well.
