

Hi Lindsay! I've used Delia's Christmas for about 20 years and love it. I'm trying the sausage rolls for the first time and have a few questions. Do I buy simple ground pork or is 'sausage meat" something different? Also how much salt would you recommend I use (given that I can't taste the raw meat to test!).

Hello Sheila,
Ground pork is minced pork meat and some pork fat. Sausage meat is minced pork, usually with a higher proportion of pork fat and seasonings.
The sausage meat we use has 14% fat and is seasoned with salt, white pepper, black pepper, ground coriander and ginger.
You can taste the seasoning by cooking a little of the sausage meat after you had added the onion and sage by cooking a small amount in a small frying pan or briefly in a microwave.
