About the Parkin

I made the parkin as per recipe but it came out with the oatmeal still hard and gritty.
It was cooked at the temperature given, but I've just seen your advice on reducing the temperature for fan ovens. I used medium oatmeal. What do you think the problem was. Even so every scrap disappeared pretty quick.
The oatmeal in this cake does give it a texture so it may be that it is as intended or it may be that the oatmeal was unusually drier than usual?
