

With reference to your Traditional Fruit Christmas Cake recipe Description A brand new hot off the press Christmas cake which we devised to make use of excess vine fruits.
The instructions say put....... 4tbs brandy and 4 tbs of port and add the fruits. Simmer for 10 mins. I found there was not nearly enough liquid in the saucepan. What have I done wrong?

That out-of-date introduction to this recipe isn’t the same on our website, but recipes that are published elsewhere (with or without permission!) hang about for years of the web.
However, in answer to your question the gently simmered fruits should be soft and plump but not wet so it will be fine.
