I am making the Dark Chunky Marmalade from the Winter Collection book. I have completed the first part of the recipe and still have the poaching liquid the fruit was simmered in for 3hr minus the 570ml used. Do I discard the remaining poaching liquid or add it to the chopped fruit etc?

The latter. You add the chopped fruit to the remaining liquid in the preserving pan.

Thanks for your reply but I am still not sure.
Do you add the poaching liquid to the chopped fruit in the preserving pan?
Should we dispose of any drained liquid that came out of the preserving pan or put it all back in?

Hello Camber,
All the poaching liquid (except for the 1 pint that you use to cook the membranes for 10 minutes) is left in the preserving pan. Add the cut peels to the liquid in the preserving pan along with the pulp that you squeeze from the muslin bag along with juices that are in the bowl beneath the sieve.
