

Advice needed please! I’ve made the famous Chocolate Torte plenty of times, including this Christmas, but I can never get the base right! I’ve always pressed it down really firmly, I’ve used a variery of tins, lined the tins with non stick paper, but I always end up with the base in bits. It never sticks to the chocolate! I’m always just left with the crumbs I want to make it again in a few weeks when my family return to the UK , but would like to get the base right this time. Any suggestions please?

From your description it sounds like you are serving the torte with the amaretti crumbs on the base but the intention is for the torte to be served turned out, so that the crumbs are a topping.
Or have I misunderstood?
