About the Braised Pork with Chorizo

HTC Braised Pork and Chorizo
Hi Lindsey
Hope you remain well?
Just a question about the braised pork with chorizo from the HTC Book. I note that the recipe needs white wine vinegar (or possibly cider vinegar, I forget) - either way, I don't have it. And I don't have the wine either. Can I make the recipe with just a stock of some kind or does it need either or both of those ingredients to make the dish work?

Yes, from the How to Cheat book. I’m using passata - I think the recipe calls for tomato Frito but I can’t source that at the moment. :)

In that case, yes, I think you can swap the wine and vinegar for stock. At the end of the cooking you could add a spot if lemon juice if it needs a bit of sharp! (and if you have it!).

The dish worked just fine with stock :). Thanks for your advice :)
I also stirred in a tbsp of creme Fraiche towards the end which was a nice addition :)
