About the Braised Pork with Chorizo
HTC Braised Pork and Chorizo

Just a question about the braised pork with chorizo from the HTC Book. I note that the recipe needs white wine vinegar (or possibly cider vinegar, I forget) - either way, I don't have it. And I don't have the wine either. Can I make the recipe with just a stock of some kind or does it need either or both of those ingredients to make the dish work?
