Can you tell me please why the book recipie and the Internet recipie (i.e. Delia online) for sticky date cake is different. Which is best to go by
The amounts of fruit etc are different as is the cooking time...I'm confused...please help

Hello,
The online version is the latest published version from Delia’s Cakes. It’s just evolved and changed a bit over the years, but you can follow either recipe, but whichever one you decide to make, stick with that version.
We currently make the online version.

Would it be ok to prepare the fruit and simmer it then leave overnight add flours etc the next day to bake the cake ... or better to do it all in one day ... sorry just trying to find time to bake it !!

It’s not something we’ve tested but yes it is something I would do. Just make sure the mixture is covered (so it doesn’t dry out) and leave it out of the fridge or it will be too solid.
