

Transatlantic oat conversion?
Delia's oat biscuit recipes call for two kinds of oats...rolled and porridge. I'm clear on the rolled oats ("old fashioned" and not quick cooking or instant) and will appreciate clarification on porridge oats. Are they alternately called steel cut oats? I love oats, and am eager to try the oat crisps and the apricot oat bars!

The porridge oats that we use are rolled oats but tend to be smaller than those sold simply as rolled oats or as jumbo rolled oats. Steel cut oats are oats that have been cut to allow the quicker absorption of liquid.
