Key lime pie
When putting the butter crumb mixture in the
flan tin with my hands do I try and keep the base as thin as possible and do I ensure there is a bit of overhang in case of shrinkage ?

Hello Klaas,
Spread all of the crumb mixture over the base and sides so that it’s an even thickness. If your tin measures 23cm across the base and is 2.5cm deep you do not need it to be any higher than the side if the tin. It does not shrink.

Just discovered that the pan I ordered for the key lime pie is 3.5 cms deep rather than the 2.5 suggested, is there a way around this?

Yes, just take the crumb mixture to 2.5cm up the side of the tin.
