I have just made the Very Fruity Irish Tea Loaf. It tastes lovely, however, it didn't rise at all. Would it be because I used gf flour and it is a different method to ordinary cakes which usually rise well?

I’m sure you used self-raising gluten free flour.
I think it may be that it needed a little more milk. Delia uses old fashioned tablespoons which are equal to two dessertspoons so we add between 20 and 40ml’s of milk to this recipe. As gf flour is very absorbent, perhaps your mixture was a bit too stiff.
