

Dear Lindsey,
I plan to make some piccalilly this weekend, and note that Delia does not salt the vegetables overnight, unlike most other recipes. The question is does salting have any advantage in terms of flavour and the keeping qualities of the pickle, or is there no point.

Hello Alan,
Generally vegetables are salted to draw out moisture and retain crunch.
As Delia’s recipe is unchanged for such a long time and we still make it I expect Delia found this step unnecessary.
