

I want to cook Delia's Lamb Shanks with Cannellini Beans and see she doesn't say that the beans need boiling for 10 mins after soaking whereas elsewhere I've read that they should be (and all other dried beans). I would prefer not to as the skin somehow seems to spoil when I do this. Help please.
