I made the Irish fruit loaf in Delias how to cook book. I followed the recipe perfectly and my loaves were more of a rock cake style than fruit loaf!! Where did I go wrong?!? Whilst mixing in the egg, milk, flour and nuts it was so dry and hard to mix. The loaves are light in colour not dark! I thought it was dry when mixing but the fruit would create moisture when cooking. Apparently not. Any help would be appareciated!
