

Why in Delia@s recipe: Marinated Chicken Kebabs with Whole Spices from Delia's Complete How to Cook. Serves 4 does Delia add bayleaves to the kebab stick when they are not going to be eaten and will only be under the grill for maximum 20 minutes? I wouldn't have thought the flavour of the bayleaf could permeate the chicken in such a short time. I've only ever added bayleaves to soup stocks and casseroles. I know you don't eat them, not because they are poisonous, but chewy and not particularly nice to eat. Thank you and stay home and safe and well. Thanks.

Bay leaves on kebabs are not uncommon, and we like fragrance of them that is released during cooking.
You can of course use more and put then between each piece of chicken or omit them if you wish.
