

Serious Problem With Recipe - Not happy as it failed completely as my XMAS day vegetable side.
Hello - I made Delia's Braised Red Cabbage with Apples for my Christmas Day family celebration. The recipe neglects to add any liquid for braising. I thought perhaps Delia might be a bit off here - but I prepared it as she directed, and after 2.5 hours in the oven, the cabbage was still firm and not wilted. It was also terribly underseasoned. I took the pot out of the oven put it on my stove, added liquid, more seasonings, more vinegar and unfortunately it was not ready for XMAS supper, I served it as leftovers the following day. I’m sorry to hear that this recipe didn’t work for you.
I’m not sure what went wrong when you made it but we make it all the time exactly as the recipe and I’ve made it at home twice in the past ten days.
It doesn’t need any liquid because the moisture comes from the cabbage, apples and onions.
Perhaps your oven wasn’t running at the correct temperature or the casserole wasn’t covered tightly enough.
This recipe works really well made ahead and reheated so there’s less to do on busy days.
