A vegan variation

I would like to make a mushroom tart or maybe a leek and onion tart or similar for a vegan friend who is coming to dinner. Is there a recipe that could be easily adapted please?

Hello Clare,
Perhaps this recipe using vegan puff pastry, leek instead of onion (but don’t do the browning part) and make a parsley oil instead of the butter.
