You can swap the crème fraiche or cream for milk or light cream cheese or quark or o% fromage frais or a combination of a couple of these.

I probably wouldn’t do the beaten egg white, but you could try.

Yes, you can add tomato halves or lay thin slices of tomato on the surface just before you bake it.
