For a traditional plate pie you need a traditional plate pie dish
My husband requests a traditional plate pie when I am making him an apple pie – one with the pastry above and below the apple filling. This is almost certainly because he comes from Lancashire. So if I am making an old- fashioned traditional pie then I want an old-fashioned traditional pie dish to cook it on – an enamelled blue and white one – and this is just that. I used to use a Pyrex one, but it was never the same. This one is made by Falcon, and comes in a set of 4 in various sizes and you can buy it through Amazon. I have opted for the largest - a 26cm set - as I plan on using it for a party for Easter Sunday lunch served with real custard
If it were up to me I would buy a deeper pie dish and fill it with lots of apple filling and just have the pastry on top, but then that’s probably because I like my apple to pastry ratio greater. (By the way Falcon do these dishes too). As it is I pile as much of the filling as I can onto the pastry base and make a larger circle of pastry to stretch over it. But whichever way you like your apple pie you can cook it in this lovely enamel pie dish.
