The best Indian flatbread
It was my good friend Simon Hopkinson who alerted me to the fact that a local store was stocking Shana Original Parathas. In fact, it was Simon who first introduced me to this delicious Indian flatbread, which really outclasses Naan. It has a soft inner centre and a flaky outer and the thing I like most is how it puffs up during cooking. You simply take a paratha from the freezer and place it in a hot frying pan – no need to add butter or oil. You then cook it for 3-5 minutes until golden, turning it every 30 seconds and applying a little gentle pressure to ensure even cooking. As you do so it will puff up.
Paratha originated in Northern India but is widely eaten throughout South Asia. It is made by folding the dough repeatedly, in a similar way to that used for making puff pastry. In fact its name comes from two words parat and atta, which literally means layers of cooked dough. The flour used is wheat flour and Shana do not add any preservatives or artificial flavourings. Make sure you buy the Original ones as these are the best.
It can be eaten simply with chutney and relishes or raita. Stuffed parathas are also common in India, where the flatbread is filled and the round circle of dough is then folded over and the edges sealed. Spiced potato is the most common stuffing – use a dry potato curry with fresh coriander - and it is then cooked in the oven.
But because Shana paratha is frozen, it is always on hand for whenever you fancy an Indian meal, be it a ready meal, a takeaway or homemade.
