Avocado with Prawns or Prawn and Avocado Cocktail
– How to CheatThis is an amazingly brilliant cheat and absolutely everyone adores it. But be warned, it only works with Tesco Prawn Cocktail which has the best, juciest prawns and dressing by a mile. Serve it however as the mood takes you. Piled into halved, ripe avocados sitting on a bed of crisp lettuce or spooned on a bed of chopped lettuce and diced avocado. Either way it's ace. However, if at all possible, there's another hero ingredient here; alas it's not on any supermarket shelves, but is widely available in wholefood shops. It's called Whole-earth Tomato Ketchup and it is far less sweet and much truer to the tomato than all the rest of the ketchups put together. When you find it, stock up because it has a fairly long shelf life. (And cheats take note: it's also an absolute wow with fish and chips). Finally, for me prawn cocktail needs to be served with some very Irish soda bread and butter. Tesco come up trumps again with the very best soda bread this side of the Irish Sea. Their Irish Wheaten Loaf looks and tastes utterly home-made. Cut in thinnish slices and spread with their finest Salted Brittany Butter, it makes a very elegant and perfect accompaniment to the prawns. All very satisfying, and zero work!
Serves 2 (double for 4, treble for 6)
1 large, ripe avocado
1 x 200 g tub Tesco Prawn Cocktail
1 fresh lime
1½ heaped tablespoons of Whole Earth Tomato Ketchup
cayenne pepper
To serve:
1 x 400 g Traditional Irish Wheaten Loaf
First empty the prawn cocktail into a bowl, add some seasoning of salt and pepper and a good pinch of cayenne. Now add the juice of half the lime along with 1½ rounded tablespoons of ketchup.
Serve as explained above with the other half of the lime cut into quarters to squeeze over. Now you're going to need to have a good rest after all that effort!
