Gave up salmon yoinks ago. Then yesterday I saw some wild salmon in Waitrose; it's a totally different animal to the anaemic and flaccid farm job.
Oh Gerry, that wild alaskan salmon? It's far and away better than the farmed stuff, pity it's also twice the price;-(

I again Gerry, I buy beautiful salmon in the supermarkets here in France. No idea where it comes from but it has a beautiful colour, taste and it is very juicy. It is not cheap but we really love it! Loads of easy ways to cook it too which are quite striking. I think that I have my favourite recipe in my profile of Salmon with Strawberries and Cucumber.
Francisca, must look at your recipe. I want some more wild salmon soon.

Thanks, Bramble. BTW I shall be bankrupt: just ordered wild salmon and brown shrimps online. I hate paying postage so I had to order a lot. Coming next Wednesday, so I'll do your recipe for shrimps and Francisca's (if she adds it to her profile) for salmon.

Here it is but never mind my translation skills which are awful! I am going to post another terrific dish on my profile: Potatoes with Ricotta and Strawberries. Will be there tomorrow I hope.
Grilled Salmon with Strawberries
1 cucumber without seeds (peel on) cut in small cubes
1 onion
2 tbspoons chives
2 tbspoons vinegar
Olive oil
6 salmon filets (no bones or skin)
2 cups of strawberries
Mix the cucumber, the chopped onion, the chives, the vinegar and a bit of olive oil. Put the mixture away in the fridge for a while. Grill the salmon on both sides without adding any fat. Add a bit of salt at the end and don’t grill too much as the salmon can get dry. Serve the salmon covered with the vinaigrette sauce and decorate with the strawberries cut in cubes. Looks wonderful, it is very simple and it is simply delicious!

PS Afraid I'm going to keep the skin on; I love crisp fish skins. Tony won't touch them.
