Very rarely do I run out of ideas but today I'm stumped.

I need a recipe for a cold desert - no dairy included unless I can use Alpro milk/single cream. No gelatine to be included either.

No fruit salad - we're bored of that
No crumble - bored of that too
Choccie mouse - bored of that
Ditto Lemon MP

I've had a brouse on the web but nothing has caught my attention.

I thought of sorbet or icecream but.... boring as well

You all know what my household plus guests list is like on a weekly basis so please ..... get thinking

Hi, BB these are a few cold desserts that I have done.
Apple and Sultana and Brandy Ice,Strawberry Alaska,
Black currant sorbet,Chocolate Banana Ice,Minted Lime Ice, Coconut Sorbet.
I have just been given a Australian Recipe Book
and will be giving these a try............ Frozen Berry Bombe,
Rhubarb and strawberry Mousse Sponge Cake this is best made a day ahead and kept inthe fridge.

Back to childhood with sliced bananas and Alpro custard - have you tried that Alpro custard yet Bea?

Make a custard with 15 floz rice milk, 2 oz cornflour, 2 oz sugar and 2 egg yolks. Let it cool then hand-blend with a little more rice milk or flavouring of your choice it to make it really creamy. Use the egg whites to make meringue and have pavlova with some soft fruit - my fave is raspberries; deforsted frozen ones are fine. Or for a nice twist, make the custard with coconut milk and add the juice of 2 limes. Sometimes I do this to make several little meringues as they are easier to serve.

Hello Busy Bee,
can Alpro be boiled? If yes, maybe you could make some "Arroz Doce", which is portuguese for Sweet Rice.
All you need to do is to boil, lets say, a cup of short- grained rice, in slightly salted water until it's almost cooked, drain the water (if there is any left), return to the pan and add Alpro or other milk substitute(that can be boiled, of course),add a piece of lemon rind, a cinnammon stick, and let it simmer, stirring frequently. The quantity of Alpro can be from 3 to 4 cups, depending on wanting a more consistent or more creamy rice, I prefer mine very creamy, so I keep adding until it reaches the desired consistence. At the end of cooking, add some sugar, to your liking. Take away from the hobb, and mix in some well beaten egg yolks, return to the hobb just to cook the egg, but don't let it boil again. Put on a deep serving dish and when cold dust with some cinnammon powder.
Delicious.
(oh! forgot to say - be sure to remove the lemon rind and cinammon stick before adding the egg yolks.)

Sorry, it's me again, just forgot to mention that sometimes I make this dessert with coconut milk and it is also very good ,with an exotic "oriental " flavour.
Goodness, just looked at the time, didn't realize it was this late, I'm a bit of a night owl.

TC - maybe just the G&T!!!
Bramble, I do keep a carton of the Alpro custard as an emergency but usually make my own.

Do you think I could make a mousse of egg whites, folded into a mix of well beaten egg yolks, sugar and passion fruit/mango puree or raspberry puree? Do you think it will hold???

On Bramble's note I like fresh strawberries with chocolate custard and whipped cream, the soya one in the spray can.
