Hi Everyone,

I want to make a moist chocolate cake, i want it to taste sweet but not to sweet and taste really chocolately. fudge maybe i'm not sure what will taste the best.

Anyone got a recipe to match my description?

I also forgot to say i do not like dark chocolate.

I have this one from an old Marguerite Patten book which all my family just love

Devils Food Cake:
3oz butter
8oz castor sugar
little vanilla essence
2 eggs
3oz plain chocolate
10 tablsp milk (preferably sour or buttermilk - you can use ordinary)
6oz self-raising flour
1/2 level teasp bicarbonate of soda
pinch salt
Cream butter and sugar with the vanilla essence, gradually beat in the whisked eggs, melt chocolate in the warm milk, cool then add to the creamed mixture alternately with the sieved dry ingredients. Put mixture into either two greased and floured 8" sandwich tins or one 8 - 9" cake tin and bake for approx 20 - 25 mins above the centre of a moderate oven 350-375F, Gas 3-4, sandwich the cakes together or test the one large cake with a skewer. Cool on a rack.

I have made this chocolate cake before, it stays wonderfully moist due to the golden syrup in the mixture.

This is a nice easy one...

125 g (4 oz) self-raising flour
150 g (5 oz) caster sugar
¾ level teaspoon bicarbonate of soda
½ level teaspoon salt
25 g (1 oz) cocoa
50 g (2 oz) butter, melted
150 ml (¼ pint) fresh single cream
1 size 3 egg, beaten
1 teaspoon vanilla essence (optional)

1. Preheat a moderate oven (Gas mark 4, 180°C, 350°F).
2. Grease and line a 7” cake tin (sorry, you really do have to do this, or you can’t get the cake out in one piece. I know this from experience).
3. If you’ve got an electric mixer, put the whole lot in a bowl and beat. If not:
4. Sift the flour, sugar, bicarbonate of soda, salt and cocoa into a mixing bowl.
5. Add the melted butter and cream.
6. Stir in the egg and vanilla essence and beat well for about 2 minutes.
7. Spoon the mixture into the prepared cake tin and bake for about 40-45 minutes (about 30-35 mins in fan oven).
8. Cool the cooked cake slightly in the tin, then turn out onto a wire rack and leave until cold.
9. Slice in half horizontally, and fill/ice as desired.

I have mucked about no end with this recipe, using Elmlea instead of cream, marg instead of butter, adding different flavourings, but you just can’t seem to go wrong with it. If you want a bigger cake, double the quantities and bake in a 9” round tin, or I’ve also used a 10” square tin. It freezes extremely well.

Thanks for your replies will have to have a look at them later and see which takes my fancy, they all sound delicious.

but i just been to WHSmith and got the Delia's how to cheat at cooking so gonna have a look at it.

I had just added the recipe of my favourite chocolate cake to my profile: moist and not too sweet as I don't like anything too sweet. Works every time!

Any tips and best ways of making Croissants witohut butter coming out everywhere?

Mat, James Martin does a chocolate cola cake, dense, damp and fudgy, and isn't too sweet, sounds sweet and sickly, but trust me it really isn't.

Try Nigella's Creme Fraiche Chocolate Cake or her Sour Cream Chocolate Cake. Both yummy, moist and rich.
