i have been asked to make a potato salad for a barbecue at the week-end. I would like to cook some new English potatoes and then cut them into large(ish) chunks, but not sure how to make the dressing or what herb to put in. Can anyone help?

Hi Woodpigeon. I very often make my own potato salad but this is to my own taste.
I cut potatoes into large'ish chunks, add a tablespoon of olive oil, freshly milled black pepper, a little salt, dried chives, finely sliced spring onions, finely diced gherkin (x1 large is sufficient) and mix together. I would then add the amount of mayonnaise you require to your taste and give it a good mix, then cover and refridgerate.

Mine is similar to Loopy's, you can use chopped onion as well as/instead of spring onions, and frozen peas straight out of the packet are lovely in here too. Mayo is usually a bit too thick for easy mixing, and I find you get a better texture altogether if you let it down with water.
I have fresh chives in the garden, which are flowering at the moment and these make a nice decoration.

Hi, my OH has a lovely recipe, it's in my profile as OH's potato salad. It is always well received. Made it for a BBQ on Sunday. It can be served warm or cold and should there be any left over it keeps fine in the fridge till the next day. We often make enough for 2 days. Biggs
My potato salad would have some chopped carrots, salt, freshly ground black pepper, gherkin relish and mayonnaise. Sometimes I also add shredded cooked chicken (perfect if you have leftover roast chicken).
Delia has some delicious potato salads, like the warm potato salad with chives.

I always use a Mary Berry recipe which everyone seems to like. It contains 2 lb. baby new potatoes which you boil until just tender in salted water containing 12 sprigs fresh mint. Drain and cool and discard mint. Put potatoes in a bowl and mix with 1/2 pint good mayo, 2 tablespoons freshly chopped chives and plenty of seasoning. Chill well before serving .

well depends if you want the pot salad available in supermarkets or not.
I would use for 8 people 1 kg of any small new potato and boil in salted water for 15 mins (unpeeled).
The run under a cold tap until tatties are quite cold, then drain thoroughly, any big ones cut in half or quaters.
Then chopp up a whole bunch of spring onmions about 8-10, including green partsm put in a bawl with the pots, salt and pepper them, and then just pour over about 250ml (half a jar) of hellmans mayo, with a few good squitrs of salad cream, and a dash of lemon juice.
If you wanted sort of fancy pot salad...check my profile, using 500g (for about 4-6) new pots, boiled in salted water for 15 mins, then cooled......then cut up a bunch of spring onions, and fry about 4 rasher of bacon cut into strips, then added to a saucde of lemon juice, loive oil and dijon / grain mustard.

I use Mrs Beetons recipe, boil new potatoes till just cooked, (so wont break up while mixing), add cooked chopped bacon, finely chopped onion, mayonnaise, a little vinigar, salt and pepper and fresh parsley, I don't take much notice of amounts just make it to taste, and if making for vegetarians just leave out the bacon...
Everyone I know who has tried it, loves it, I would highly recommend this.........
