Hi there, we're having a big party soon, and i wanted to make this in batches and freeze it and serve it cold as a salad. Can anyone tell me it freezes well?

Hi thanks for you help and speedy too, but i really love the 'oven roasted' version, rather than the less tasty cooked in a pan...

I've seen a number of recipes for oven roasted ratatouille. They all specified do not freeze. No idea why. They did say re-heats well in microwave.

thanks ever so much for your help. I've had a quick look around other boards and there is a mixture of opinions. I think the easiest thing is to TRY it myself in a small quantity!!! I'll let you know.

I froze some leftover once, and it wasn't very good. It loses its texture and is a bit watery. That's what I thought, anyway. See if you agree, when you try it. Hope it works for you.

hi, after all the mixed opinions, I've tried it myself...!
I drained off the olive oil before freezing and didn't use fresh toms...i added sundried toms and olive oil after it had defrosted...i have to say that it wasn't bad at all! i will defo be doing it for our party. Thanks for all the help.
