I'd love to do a course on sweet making, NOT chocolate, not puddings, just sweets... boiled ones and stuff like that. Gave everyone a tiny pot of jam last year instead of Christmas Card, so thinking along similar lines for this year. My (2nd batch) marshmallows were (though I say it myself!!) absolutely amazing so please advise. Have tried searching the internet. Hopefully a day or weekend course... anywhere if it's good enough!
how about sharing your recipe for marsh mellows!
Not many confectionery courses around are there, other than full or part time at colleges.
There are a few chocolate course that you can go on.
I did find 2 stite though one was regency and the other tudor, for confectionery.

Was an adapted version of James Martin's from his Desserts book, 1st batch was exactly as recipe but there was too much vanilla (and I could tell when I put it in) the 2nd batch was with real almond essence and apple juice dried strawberries instead of the fresh raspberries. MMmm!

Mmmm, I'd also love to see the marshmallow recipe
I will have to buy a sugar thermometer as this will let me know how soft/hard the sweet will be etc. There are a few tests that can be done as i googled but still seems a little complex so will buy one.
