Staying in Suffolk last week, hosts produced an absolutely scrummy chicken dish. It was baked, uncovered (I think - certainly finished off uncovered) in a baking tin and was garlicky, lemony, thymey (garlic cloves whole and unpeeled) white winey - (chicken was in joints) and delicious! Unfortunately they've cleared off abroad for several weeks so I can 't ask them for the recipe. I remember them saying it was a Waitrose recipe but I've looked on the W/rose website and can't find it. The lemon was in halves. Anyone come across it? I realise it would be easy to make up, but the combination of flavours was excellent, and I'd love the recipe. Thanks in advance to anyone who can throw light! xxx

Just had a look at the Waitrose web site and searched for roasted chicken with lemon in the recipe search, and the first result was - Roasted chicken with lemon, white wine and olives - it seems to have all the things you mentioned, maybe this is the one. I'm going to give it a try, it seems delicious.

Broomstick, I was looking on waitrose, but you hadn't mentioned olives so I assumed they weren't part of the recipe.
Amelia, no worries! I took the easy route of googling =chicken garlic lemon and thyme recipe waitrose= and it came up as the first one.
To be honest, I dont know many people that like olives so I would probably leave them out if I was cooking for guests. I must try this next week.

Just had another look at that recipe and I'm pretty sure it's the one. They just left the olives out. I can't tell you how scrummy it was. If you want to prepare it ahead ready to go into the oven when friends arrive, that means browining the chicken. I wouldn't want to do that as it would warm the chicken and then there'd be a gap before it was cooked (salmonella etc). I suppose one could not brown it and brush it with butter, or something. Nigella brushes a similar one with honey but I think that would take away from those other gorgeous flavours. Any thoughts?

This one is called "Slow Braised Garlic Chicken" and is from " Good Housekeeping. We had it at our daughter's and it was scrumptious.
