Hi All!

Hope you can help. I'm planning on making this cake but was wondering if you could use dark strong ale instead of stout? Also what's with the flour on to baking parchment and not a bowl? Is there a specific reason for the mixing to be done in this way or could you just as easily do it in a bowl?

Any help or suggestions would be great!

GG, I'm sure any dark ale would do. Also, provided flour is added in stages, alternating with the beer mix, can't see that it matters whether it's on parchment or in a bowl. The cake sounds lovely.

Ahh great! I couldn't work out if there was a particular reason for the parchment and could just envision it getting messy! Bowl and stages it is!

the Cake should be great as I'm tweaking it - as I usually do! - I'm using a dark strong malty ale in the mix as well as making a syrup with to drizle the cakes once they come out the oven. I'm also adding morello cherries into the mix and using green and blacks dark cherry chocolate for the icing so it should all work pretty well!

The morello cherries and G and B's choc sounds great. Is that instead of walnuts?
