Loved watching Delia on TV, but her cheat recipes' don't really work over here in Holland as I'm having problems substituting her cheat products with something else. My question is: I would like to make a batch of grilled aubergines slices for my freezer (creating my own cheat), but I'm not sure if just grilling the aubergines and freezing them would work? Do I need to season the slices first before grilling, or can I do this afterwards? Would appreciate any advice from the experts, You! Thanks marilyn
It's easy Marilyn.
The hybrid aubergines today don't need to be salted any more, as they've had the bitterness bred out of the them.
Just slice them and lightly brush with oil and lay on a hot ridged grill-pan until they show the slightly charred stripes-flip over and repeat. They don't need to be fully cooked as they'll cook in the finished dish, I don't season them either.
I lay mine on cake cooling racks until they're cold then open freeze on a tray. When they're solid pack them in a Tupperware type box and seal.

Thanks for your quick reply. Wasn't quite sure if it was okay just lightly grilling them and then freezing as I usually blanch my veg. first before freezing.
P.S. still haven't received the newsletter either, but did send a new email to Noreen's group mentioning that I did receive her feedback email, but nothing after that.

I have actually frozen them raw, Marilyn, on top of a moussaka that didn't get cooked, and it was not bad when I brought it out, put the sauce on and cooked it from frozen. So you can't really spoil them.
I would do Joy's way next time, though, because they did not taste of much :-)))
