An intense Roussillon with blackcurrant and bilberry flavours, enhanced by hints of juniper, wild thyme, sage and rosemary, this is a wonderful robust wine from a former Best Young Sommelier of France.
Winemaker Hervé Bizeul who, in his younger days, won Best Young Sommelier of France, knows how to make spectacular, but food-friendly wines.
This wine sees a blend of 35% Carignan, 35% Grenache from old 40-80 year old vines and 30% Syrah from young vines.
A classic Roussillon, intense blackcurrant and bilberry, with hints of the “Garrigue” in which it’s grown (juniper, wild thyme, sage, rosemary) and will appeal to robust palates to match the herbs of the chicken and roasted red onions. It can also be enjoyed in coming days alongside dishes with more body and richer sauces.
Important Note: serve slightly cool at 16 degrees, and leave 30 minutes to “open up.”
