If you are in search of one cheese to tide you over, don't be seduced by the drier, less flavoursome truckles. Go for a hefty wedge that will ripen better and conserve well.

A fantastic piece of Stilton
If you're feeding large numbers of people, opt for a whole Stilton, or scale things down with a half or quarter. Many people are lured by the look of mini Stiltons but don't be fooled by aesthetics. They don't taste as good as the large cheese and aren't good value for money. Instead, try decorating your table with a majestic chunk off the block.
