The flavour of orange zest does something quite magical to the flavour of rhubarb, and this light, fluffy meringue pie is a perfect dessert for late spring. ‘Pile-it-high meringue', incidentally, applies only if you have extra egg whites to use up..
This is something a little different to ring the changes whilst we have an abundance of sprouting broccoli. I think it goes very well with most oriental dishes or just by itself with some steamed rice.
This is a good family recipe and provides quite an interesting way of offering fish to children. Young-at-heart adults have also been known to sing its praises. You can use Greenland halibut or hoki instead of cod or haddock.
Filled with wintry root veg and a cheesy sauce, with a parmesan pastry, this pie is a real treat! Replace the lard with vegetable fat if making this for vegetarians.
The cheese we used for the sauce in this recipe was Gorgonzola, but Roquefort is also extremely good. Vegetarians might like to know that a vegetarian parmesan-style cheese is available from www.bookhamcheese.co.uk
Delia's Potato, Cheese and Spring Onion Souffle is from Delia's Happy Christmas, but it's too good to only eat once a year.
In Thailand, they use pomelo in salads, which is very similar to grapefruit. I have used pink grapefruit here, but when they're not available, you could ring the changes and use a thinly sliced, medium-sized mango.
I love serving this, one of my most favourite soups. First, it has an extremely rich, beautiful colour, almost saffron I would say. And second, people can never quite guess what it is.
The combination of orange and passion fruit gives this a tangy flavour, and because passion fruit is always available it’s great to use between seasons, particularly in winter.
You won't believe how utterly simple and easy this is, and yet it tastes exotic and wonderful and, what's more, it can all be prepared well in advance and the fish added about 10 minutes before you want to eat it.
