Sparkling Wine Jellies with Summer Berries
If you’re stressed out, or time-poor, but have to produce food at lightning speed, then packet jellies can be an absolute lifeline. With a little help and creativity, they can provide desserts which look like you’ve actually bothered a bit! So in this instance, while serving summer berries just straight can seem rather a cop-out, serving them in a sparkling, shimmering jelly laced with wine gives them an instant up-grade. Add to that a generous dollop of Isigny AOC crème fraiche (Tesco or Sainsbury's) and you’ll have a delightfully cool taste of summer that I feel would be hard to match. You can, by the way, use any combination of fruit instead of blackcurrants, redcurrants and blueberries, depending on what's available, but use 2oz (50g) of each.

Method
First prepare the fruit: remove the stalks and halve the strawberries if they are too large. Then mix them together in a large bowl, being very gentle so as to avoid bruising them.
Meanwhile break the jelly into cubes and put the cubes into a microwaveable measuring jug. Add 3 tablespoons of the wine and the sugar, stir everything together and then heat in the microwave on full power for 11/2 minutes. Make sure that everything has dissolved completely before adding the remaining cold wine and the lime juice.
Then pour the liquid into a jug and allow it to cool. While that's happening, divide the mixed fruit amongst the glasses. Next, pour the jelly over the fruit. Cover the glasses with clingfilm and put them in the fridge overnight by which time the jellies will have reached a 'soft set'. Serve chilled with crème fraiche.
