Sausages with Chilli Sauce
Printed in the 70's, Delia's book Frugal Food didn't have many pictures. However the recipes are still as good today as they were then, so we have included some on the site with generic photographs.

Begin by de-seeding the chilli (if using a whole one), discarding the fiery seeds and chopping the red part finely.
Next stir the onion, green pepper and garlic into the fat remaining in the pan and cook gently until softened (about 10 minutes).
Allow it to simmer very gently, uncovered, stirring occasionally, for about 25 minutes until the tomatoes are reduced to a thick, sauce-like consistency. Then taste and season with salt and pepper before serving.
This is very good with buttered noodles or creamy mashed potato.
