Quintessentially American, muffins have become massively popular on this side of the pond too. Delia has some cracking variations - and advice on how to achieve the best texture ever!
Instead of making individual muffins, this recipe makes one large cake (or you could do small ones if you prefer). Although this one is made with apple, you could equally use plums or apricots in the summer.
It’s not easy to buy damsons, but it’s worth searching in farm shops and markets at the end of August. However, if they’re not forthcoming, you can still make these with chopped dark plums.
Any of our muffin recipes can be adapted to any fruit, and blueberries have always been popular, so in this recipe I decided, instead of making muffins, I’d use the mixture to make a cake, which has turned out to be a real winner!
You can make these with ready-to-eat dried apricots, but in the summer they are even better made with fresh.
